Thank goodness for light, buttery, flaky snacks like these Angel Wafers to help brighten my day, especially when my Internet connection has been down for the past one and a half days. (Yes, I am totally someone who takes solace in food. Not much of a surprise, eh? But it was my Internet connection, man. Now you understand?)

    Lian: Nope, they can be immediately eaten as they are. Have you seen freshly made ones in Asian bakeries? I have, but never tried them.

    I’ve seen these in stores but never got them. I meant earlier that if you microwaved them, they’d taste better, no? So that it sort of re-cooks all that sugar and buttery-ness.

    Lian: Hmm, that’s an idea worth trying. I’d never thought to do it. I do like to microwave Chips Ahoy! Chocolate Chip Cookies, though, so that the chips are all melty.

    If you want to try them but can’t find them at a store, they’re really easy to make. They’re also called palmiers. Take 1 package of puff pastry (found in the frozen section of most grocery stores) & thaw & unfold it. Sprinkle the dough with a healthy handful of sugar (you can pretty much fill it with anything from cinnamon sugar to fruit jam). Starting at both ends of the dough, roll it toward the middle to get the shape. Then cut into 1/2″ slices & bake for 10-12 mins @ 425 degrees (F). Remove from oven, sprinkle with more sugar & bake an additional 3-5 mins, until cookies are glazed and brown. These are my no fail last minute company cookies. Enjoy!
